
A mouth-watering tasty one that can be used whether camping or at home
INGREDIENTS:
- 500gm blade diced
- 1 large tbsp plain flour
- Salt/pepper
- Oil
- 1 large onion chopped
- 1 clove garlic thinly sliced
- 100gm bacon diced
- ½ cup red wine
- 1 cup beef stock
- 2 sprigs rosemary
- 2 bay leaves
METHOD:
- Toss beef in seasoned flour
- Heat oil in a large saucepan over high heat
- Cook beef, in batches, stirring until browned. Transfer to a plate
- Reduce heat, add oil, onion, garlic, bacon, stirring often for 5 minutes
- Return beef to pan with red wine reduce 1 minute then add beef stock, rosemary and bay leaves
- Bring to the boil
- Reduce heat to low and simmer, cover and cook for 1 hour
- Uncover and simmer gently, stirring occasionally, for 30 minutes or until beef is tender
Serve with mashed potato and vegetables of your choice.
