Cajun Steak with seasonal vegetables

This bright delicious dish is great with a good drizzle of Balsamic vinegar.


500 gm Sizzling Steak
2 teaspoons Cajun Spice
1/2 Jap Pumpkin
1 medium Eggplant
2 Capsicums mixed colours
2 medium zucchini
1/2 punnet Cherry Tomatoes
2 red onions
1 large fennel
2 beetroot
3 or 4 cloves garlic
coriander or basil

  • Chopped all vegetables into large cubes
  • Place all vegetables, garlic, salt & pepper and drizzle generously with Olive Oil
  • Place in a 180c oven for 30-40 minutes
  • when Vegetables are cooked, refer to my ’ how to cook to the perfect BBQ Steak’ on the website
  • Once Cajun steak is cooked, slice against the grain
  • Serve with chopped coriander or basil and a generous drizzle of balsamic vinegar
